Mahi ala moose

    (for two)

    • 2 mahi filets (I use Publix frozen ones thawed in cold water for an hour or so)
    • 1/2 fennel bulb
    • Fennel leaves
    • 1/2 large onion
    • Pasta (linguine works well)
    • Butter
    • Olive oil
    • Salt
    • Pepper
    • 1 lemon

    Do:

    Heat oven to 450.

    Place mahi in 8x8 glass baking dish. Sprinkle some kosher salt and grind some black pepper over.

    Chop onion and fennel bulb. Place fennel leaves (the dill looking stuff) over fish.

    Place 1 tbsp butter and some olive oil in a pan. Heat up.

    Sautee onion and fennel until they've softened up a bit. When done, squeeze half a lemon over it.

    Pour over fish.

    Stick in oven for 15-18 mins or around 145 degrees internal temp. Meanwhile, cook some pasta.

    When done, place mahi filets on plate. Put pasta back in pot and pour the fennel/onion/sauce mix over and toss. Put pasta on plate with fish. Serve, with remaining lemon on the side.
