I'm looking at a wheel that I like, but they only make it with a 35 or 40 offset. I'm pretty sure that 35 won't work ( I have an 05 wrx), but I'm not sure about the 40. Is anyone running wheels with an offset of 40?

what width is the wheel? with a 40mm offset you should probably be running a 8.5 wide wheel.

Maybe an offset of high 40s or low 50s.

The optimum offset for our subarus is usually a +48. From what I have gathered from other sites, you do not want to go more than +/-5 in either direction. So no less than a +43 and no more than a +53.
