Swedish 'pizza salad'

    This is a really common dish in Sweden, usually served at any of the many many pizza joints as an appetizer with some fresh baked bread.

    Ingredients:
    1 medium size head of cabbage (white)
    1/2 cup vinegar (I use white)
    1/2 cup olive oil
    Black pepper
    Salt

    Directions:
    Shred the cabbage. I use a cheesegrater, you can also use a food processor or whatever else suits your fancy. Mix together vinegar and olive oil in a pan, heat up until it is about boiling. Pour over shredded cabbage. Add a little salt (you can also add maybe 1/2 tsp sugar) and coarse ground black pepper. Mix up. Stick in refrigerator for at least a couple of hours, preferably a day or so.
