I just recently bought some 17in wheels for the outback sport. The center bore is 74mm where as the subaru's is 56.1mm. Anyone know of a good place to get it bored out or someone willing to do this?

You want hub centric rings to take up the gap between your 56.1 hub and the 74mm hub bore of the wheel. No boring needed.

Butler Tire or Discount Tire may even have them in stock as well
