Starting this so those who do cook can add their recipes for what the hell to do with all that left over turkey : Turkey Sandwich There has to be at least 100 variations of this thing. My personal favorite? Two nice pieces of fresh sourdough bread, spicy mayo (DIY), nice slices of turkey breast or other white meat (I prefer the dark for cooking stuff), dressing / "stuffing" depending on where you hail from and cranberry sauce. Yum! Super Quick Turkey Tacos (Soft) I do not like hard tacos, but I'd imagine this would taste just as good with the hard shells. After every Turkey day I spend several minutes pulling part of the meat on the turkey and several minutes carving nice slices of meat for sandwiches. This is something really quick and easy for the pulled stuff...Get our your favorite skillet, place on medium heat. Add butter, diced red onion, mushroom and saute for a few minutes (generally until onion is soft). Add minced garlic (to taste). Add freshly ground black pepper (to taste). Throw in the turkey and toss, throw on some cayenne and chili powder and let it all warm up nice and evenly. Finally, sprinkle a touch of jack cheese on top and cover with a small lid to allow proper cheese metlage. Plate with 3 small soft tortillas, side of salsa verde and garnish with cilantro. Yum!
My mom always makes this dank King Ranch Casserole with the leftover turkey. I dont know the recipe, just a bunch of corn tortillas covered in a bunch of turkey and mexican cheeses and salsa. Cook it at a real low temp for a while until the cheese melts and then top with sour cream and more salsa. But this year she got a small turkey and we didnt really have any leftovers so I'll have to wait for christmas for the king ranch specialty.
I'm all about turkey ala king... Turkey scraps + cream of mushroom soup + peas, mixed together, heat and pour over your favorite toasted bread or english muffins... mmmm
