Made this up the other day... 1 can black beans, drained and rinsed 1 can corn, drained and rinsed 1 bunch cilantro, chopped 1 red bell pepper, chopped 1 medium onion (red works great), chopped finely 1/2 lb pasta (I used rotini), cooked al dente and chilled Lemon juice (approx 3 tbsp) Olive oil (approx 2 tbsp) Black pepper Mix together, let sit for a few hours or a day in the fridge. Nice and healthy, and damn tasty. Stores well for a few days.
excellent! that stuff's really good. (that's i complement, i used to write menus when i lived in florida). the tri-colored rotini improves the presentation as well.
