Chicken with lemon

    Very lemony. :)

    Ingredients:
    3-4 boneless skinless chicken breasts
    1/2 cup lemon juice
    1-2 tsp lemon zest (or extract)
    2 tbsp white wine vinegar
    1 yellow onion
    Salt
    Pepper
    Paprika

    Directions:
    Preheat oven to 350. Place chicken in glass baking dish (9x13 or 8x8 should be fine depending on how much you're making). Mix together lemon juice, zest/extract and vinegar. Pour over. Slice onion and place in dish. Season with salt, black pepper and some paprika. Cover dish with foil tightly. Bake for 30 mins, remove foil, bake another 30 mins.

    Had this last night with some brown rice and mixed veggies. Good, but VERY lemony!

    think it would work better without the zest and something more standard for chicken like worchestire sauce? I usually use that and a tiny bit of cajun power garlic sauce.

    Try it and report back. ;) Not sure how worcestershire sauce and lemon would work, but never hurts to experiment.

    orange juice, yes orange juice works welll too

    unless your trying to perfect a jalepeno chicken recipe...:keke: :eek: (from personal experience)

    That sounds delicious..I wonder what the sodium amount is though...I need to limit my sodium because of high BP....I guess that I wouldn't add the salt...
