I'm a student and simple cooking based on the manager's special at Krogers is my food source. This week it was salmon, here's what I did. Put a bit of oil in the pan, throw a spoonful or so of salsa in there and wait for it to starts the sizzling noise. Then take the fillet of salmon (making sure each side is oiled up well! don't want stuck salmon!) and throw it fleshy side down and let it suck in all that salsa'ry goodness. Then flip it and cook it to your desired level. I had it with rice, here's a pic! In real life it has more colour going on but it's a cell phone so what ya expect!
Looks good! If I'm going Kroger style though, they have allready marinated salmon(2 filets for $7) which are pretty tasty. They have bourbon marinated and Jerk style. I just put them on light oil in the oven for 17 minutes or so... pretty tasty, not a bad price.
