Simple manicotti

    Simple, but tasty. :drool:

    OK, fetch:
    Big thing of ricotta cheese (like 32 oz)
    Big bag of shredded mozzarella
    Smaller bag of parmesan
    2 eggs
    Some italian sausage (uncooked)
    Spinach (frozen and chopped is good)
    Manicotti shells
    Couple big jars/cans of pasta sauce (Hunt's big cans are good and cheap)

    Throw the frozen spinach in a pot of water and warm up. Cut the sausage casings open and brown the sausage like you would ground beef -- try to chop it up pretty finely while you're doing so. When sausage is browned and spinach is thawed, drain the spinach and squeeze as much water out as possible; you can wrap it in some paper towels or cheesecloth or whatever you feel is suitable.

    Mix together ricotta cheese, a cup and a half of the mozzarella, something like 1/4 cup parmesan, two eggs, a pinch of salt, some fresh ground black pepper, sausage and spinach. Spread some sauce in the bottom of a 9x13 baking dish or equivalent. Stuff mixture into _uncooked_ manicotti noodles (ignore the directions on the package, you do not want to stuff cooked manicotti, trust me). Place manicotti in baking dish. Pour the rest of the sauce over. Throw a bunch of mozzarella and some parmesan on top. Cover with aluminum foil and bake at 375 for 50 mins, then remove foil and crank heat to 425 until the cheese is nicely browned.

    Whenever using canned sauces I like to throw in fresh herbs and garlic and red wine. It makes people think I slaved over the burner all day lol

    me too. i have problems leaving anything as it is out the box or can in this jar. a zip lock bag with the corner cut off is how ive stuffed cooked manicotti before. havent had this in a long time. guess ill have to make it soon. thanks moose
