Skirt steak

    This is a very southwest style skirt steak.

    Grab a nice piece of skirt steak
    Cumin
    Onion Powder
    Garlic
    Chile powder
    lime juice
    salt
    pepper

    Squeeze some lime juice onto the skirt steak to coat. Then sprinkle on a lil bit of each of those herbs. Chop up some garlic and put it on the steak aswell pressing it into the meat.

    Skirt steak is relatively tough unless you cook it right. I recommend a medium-rare or medium. And you must slice it at a 45degree angle. Some rice and beans and you are good to go. This can also be used as fajita meat.

    I just started buying skirt steakes from the Mexican grocery store (carnachera) on 41 just northof Windy Hill Road.

    They sell skirt steak called arrachera, and some places have a tenderizer press that they'll run it through if you ask them.
