I am hoping to run the track day at TGP when we get it together and can get a set of 17" 245 40 (I think) racing tires that should have enough tread left for a day of lapping or two. The questions is, would these fit on my car (Stock Sti springs which offer minimal drop on a stock wrx) without major issues? I realize that they might not be something I would want to daily drive, but for a track day, does anyone have any practical experience with a similar set up?

I run 245\40\17 goodyear slicks and they fit fine.

I honestly dont see an issue. A stock STi wheel & stock RE tire is going to be slightly larger, overall, than your 17" 245 and that profile.
