Took this off Alton Brown's show. As usual I don't really pay very close attention to every detail, but here's what I did: Ingredients: Chicken (duh) -- I used breasts with the bones left in them. You can use pretty much anything, I think he used a whole cut up fryer on the show. Garlic -- 3/4 bulbs Herbs -- I used thyme and basil, fresh Olive oil Salt Black Pepper Bread dipping spices (I just like the mix of nice flavor this stuff adds) White bread of some sort Directions: Preheat oven to 350. Brown the chicken pieces in olive oil in a large pan. Add 40-ish peeled garlic cloves. Add salt, fresh ground pepper, bread dipping spices or whatever you feel like, and 1/2 to 3/4 cups of olive oil. Top off with fresh herbs. Cover and stick in oven for 1 1/2 hours. When done, slice up some bread. Brush the olive oil mix (all garlic-y and yummy) from the pan on both sides of the bread, stick under broiler, roast/broil both sides. Take a garlic clove (soft and brown) from the pan, and spread out on the roasted bread like butter. Eat with chicken and a side dish / vegetable of choice.
